HARVEST

The truffle harvest is carried out with the valuable help of rigorously trained dogs, which are able to detect the presence and exact location of the truffles through their fine smell, within a underground depth ranging between 15 and 40 cms. In that point, the “truffle hunter” proceeds to gently dig until reaching the fungus, which is carefully collected to avoid damaging it.

The truffles are daily collected, cleaned, selected and calibrated as: Premium, First, Second and Sections.

Then they are stored inside a cold chamber, with balanced moist and temperature to correctly preserve the texture and aroma.

Finally they are packed and shipped airways, inside expanded polystyrene boxes, with coolers in order to ensure an optimal quality on arrival.
